Tie the legs with kitchen twine, if desired and pat the hens with the remaining butter herb rub to cover any unseasoned areas. Roast for 40 to 45 minutes, rotating the baking dish halfway through to ensure even cooking. The hens are done with the skin is golden brown and a meat thermometer inserted into the thickest portion of meat registers 165 degrees F.

You might find them labeled called poussins or Rock Cornish Game Hens, though technically they are not game birds as they aren’t wild. They are leaner than chicken, with a lower fat content and therefore fewer calories comparatively. Baste the chicken with the pan juices every 10 minutes during the last 30 minutes of cooking. As you can see in the pictures, I place the roasted Cornish hens on a bed of black bean rice and garnished it with some fresh oregano leaves and sliced lime wedges. If you can’t find fresh oregano leaves, you can swap them with fresh thyme leaves. Believe me, even if you serve these with a simple salad, they will disappear in no time.

  • Add butter to top of each Cornish Hen by places 1 Tablespoon pats of butter on top and around the hens in the roasting pan.

I use a plate for this, or sometimes a heavy lid from a pan. Just know that your cooking time will be a little longer. Make sure to check that the internal temperature reaches 165ºF before removing from the oven to rest. You may also need to leave the hens under the broiler for a few minutes to get that skin nice and crispy.

Work quickly when you spread the butter over the hens. The butter can solidify when it touches the cold bird, which makes it harder to spread. I want to talk about salt-crusted Cornish hen. Spread vegetables in one layer into a 9 x 13 x 2 baking dish. Toss everything together to coat the vegetables and spread evenly into a 9″ x 13″x 2″ baking dish. Rinse, pat dry and set aside the Cornish Game Hens. Transfer the hens to a platter, cover with foil and let sit while preparing the sauce. Simply cut the hen in half through the breast bone and serve with side dishes.
